Bester, a hybrid of beluga and sterlet sturgeon, was first raised in the USSR in 1952. Beluga sturgeon is a very large fast-growing fish, which, however, becomes mature only at the age of 15-18 years. But sterlet, being a small fish, can lay eggs from the age of 5–6 years. By crossbreeding these two species, it became possible to get a unique breed of sturgeon, which combines the rapid maturation of sterlet and rapid growth of beluga sturgeon.
The diameter of bester eggs is 2.5 mm, the color ranges from silvery-gray to anthracite. Its taste is gentle, delicate, buttery, closer to the taste of beluga sturgeon caviar.
Shelf life is up to 12 months at a temperature of - 2 to -4° C.Content: sturgeon roe, salt, LIV-1 preservative.
